AFAIK you have following options
Digivis 500 - Supervisory software for ac500 connect over ethernet.
Compact HMI - no idea on connection
Panel 800 - not sure but might be possible over modbus tcp or over OPC.

I am not familiar with the ESA panels, so I cant comment on them. From the web site, it does look like they connect to the Visualisation part of the CoDeSys prpgramming tool somehow, but its not clear to me how they do this.
Anyway, the simplest and cheapest way to connect to an HMI on the AC500 series PLC's is to use the Built-in web server inside any ethernet enabled CPU. Just build
the CoDeSys visualisation and then conect any Java enabled web browser to the PLC. Both windows IE and Firefox worked well for me.
The easiest way described Rob - AC500 PLC has integrated webserver (necessary to choose model with this support). There is possible to create "HMI screens" via WebVisu and upload them to PLC. PLC will arrange access to those HMIs via webserver.
BTW - there are also available panels (650-WEB series) thru which you can achieve a graphical visualization using the microbrowser and connection to AC500 Webserver (means there is not necessary to program panel again - all is read from AC500 side).
