You can block-select several (or all) variables and use the menu "Edit/Assign block to resource manually" to change the resource allocation for all selected variables in one step.
To block-select several variables you left click into the name of the first and with keeping the left mouse key down you drag down over several variables. To select all the variables click on the name of the first variable (be sure to not be in the edit name mode) and then press SHIFT+CTRL+END. That will select the whole Variable list.
In your case I would first filter the variable list for all unassigned variables by clicking on the small triangle on the right side of the RES header of the resource column and select the "----". Only Unassigned Variables should show now. Then Block select them all (see above) and then use "Edit/Assign block to resource automatically". This will assign the variables to the resource that contains the program where the variable is written to(connected to an output of a function block).
