Hello Fabio,
I've quickly checked the zip file attached to this thread.
1) I only see "OnDataChange", i.e. OPC server sending updates to active subscription.
2) I count 15684 OnDataChange. Most items seem subscribed twice?
Line 8: CConnector::OnDataChange - data: item(936448), quality(c0), 7/28/2016 9:10:29 AM, value(VT_R4) = 40.9144
Line 18: CConnector::OnDataChange - data: item(38656), quality(c0), 7/28/2016 9:10:29 AM, value(VT_R4) = 40.9144
Line 28: CConnector::OnDataChange - data: item(38144), quality(c0), 7/28/2016 9:10:31 AM, value(VT_R4) = 60.1852
Line 38: CConnector::OnDataChange - data: item(935936), quality(c0), 7/28/2016 9:10:31 AM, value(VT_R4) = 60.1852
3) 5526 updates have GOOD quality (c0)
4) 10000+ updates have BAD quality (18, 20, etc)
I see no evidence of "refresh", etc. and frankly speaking I doubt it to origin within the process graphics layers of 800xA.
Can it be the tunneller itself performing the refresh? Can you try with another tunneller?
I will be back in office in two weeks from now, can you send me an email and we can continue with this through a regular support case?
I guess you should file a case with regional support (Italy -> DE L3 in Minden).

On vacation with only iPad at hand. Will check at first opportunity. If "Basic" log was active, most of the generic OPC calls should be visible in clear text (AddGroup, AddItem, etc).
Does the applog agree with what you see in Matrikon?
