Cat7 can we use for AC800M Controller and CI Cards ( CI868,CI867)
Can we use Cat7 cable for new project for AC800M Controller CI cards.

Yes, but it is very overqualified, more expensive and more difficult to bend / twist / wire up in small confined spaces.
The shielding may cause ground loops/added interference if both ends are not on the exact same 0V (ground) potential.
For long runs I recommend cutting the outer shield at the end point to avoid ground loops leaving the switch end to ground the shield.
For less interference use fiber optics as network backbone as far as possible and as short as possible copper connection from switch to end point. In practice, avoid using copper Ethernet outside a cabinet or between rooms.
